A one-of-a-kind set of two knives hand made in Melbourne Australia, the mid size kitchen knife is great for general use on most cutting boards, while the smaller knife excels at boning and general pairing work.

The geometry of these knives is inspired by traditional Japanese cutlery. The tips are strong yet slender making for detailed work. A thicker spine gives the blade some stiffness. The belly has a gentle, rocking curve that leads into a flat heel made for heavier chopping and slicing. The handle is parallel to the blade edge, lifting the hand up slightly and engaging the arm in use.

The blade is made from Sandvik 12C27™, a martensitic stainless chromium steel optimized for high quality professional knife applications, this steel provides a unique combination of properties including very high hardness and good corrosion resistance. A satin finish allows for easy, stain-free maintenance.

The handle is made of Micarta, a composite of coloured canvas in a thermoset plastic. This makes for a handle that is not only visually appealing with its layered appearance, but is also extremely high in strength and dimensional stability.
