A one-of-a-kind knife hand made in Melbourne Australia, this large kitchen knife is great for general use on larger cutting boards.

The geometry of this knife is inspired by traditional Japanese cutlery. The tip is strong yet slender making it great for detail work. A thicker spine gives the blade some stiffness. The belly has a gentle, rocking curve that leads into a flat, tall heel made for heavier chopping. The handle is parallel to the blade edge, lifting the hand up slightly and engaging the arm in use.

The blade is made from Sandvik 12C27™, a martensitic stainless chromium steel optimized for high quality professional knife applications, this steel provides a unique combination of properties including very high hardness and good corrosion resistance. A satin finish allows for easy, stain-free maintenance.

The handle is made of Garolite, a glass cloth impregnated with epoxy resin under pressure and heat. This makes for a handle that is not only visually appealing with its layered appearance, but is also extremely high in strength and dimensional stability.
