A one-of-a-kind knife hand made in Melbourne Australia, this mid size kitchen knife is great for general use on regular cutting boards.
The geometry of this knife is inspired by traditional Japanese cutlery. With a convex edge and more “meat” in the blade, this knife is suited to heavier cutting and chopping tasks. The belly has a gentle, rocking curve that leads into a flat, tall heel. The handle is parallel to the blade edge, lifting the hand up slightly and engaging the arm in use.
The blade is made from Sandvik 12C27™, a martensitic stainless chromium steel optimized for high quality professional knife applications, this steel provides a unique combination of properties including very high hardness and good corrosion resistance. A satin finish allows for easy, stain-free maintenance.
The handle is made of stabilised timber, wood that has been impregnated with a chemical stabilizing solution making it more durable and less prone to warping or cracking than natural, untreated wood. This Maple burl shows exquisite swirls and colour changes that are accentuated by the angular lines of the overall handle shape.
